Hasn't the weather been just fabulous this week?!
Anyway, here's a dish I made this week that's a real favourite for my dad and myself, and a little outside the student budget!
Ingredients:
• 2 garlic cloves
• 1 fresh chilli (add dried chillies for extra spice)
• 1 shredded courgette
• generous pouring of passata
• handful of king prawns
• piece of squid
• portion of spaghetti
• drizzle of oil
• light coating of flour
Method:
1) slice squid into small rings and lightly coat in flour to lock in moisture.
2) Lightly pan-fry the squid on a pre-heated/oiled pan with the sliced garlic for about a minute or two .
3) slice up the fresh chilli and add to the pan. Then add the passata sauce.
4) if you're adding dried chillis, just pierce the skin. This allows the sauce to flow through the chillis, making the sauce nice and warm with spice.
5) shred the courgette into the sauce and mix well. Add the prawns now.
6) Add cooked spaghetti and mix it all up nicely.
•• Courgetti is basically just shredded courgette and has recently become a popular alternative to spaghetti for hipster, health-conscious consumers. However I can't quite give up my carbs, so I mixed my Courgetti through my spaghetti! ••
P.s. Pizza Express dough balls are absolutely divine, best thing to eat with Italian!
