Morning! It's been a very busy week for me, but I've been planning this post for a couple weeks now!
In light of the incredible weather recently, my eating has been more "summery" in a way; so here is a feature on some great salads that are all easy enough to make and have a great mixture of flavours and textures that are ideal for barbecues etc.
1) Fresh Salad:
This is very simple, but very flavoursome and light. If you want something a little more wholesome try adding mixed grains like quinoa or wild rice.
• 1/2 avocado
• thick slice of cucumber
• 4 or 5 cherry tomatoes
• a sprig of fresh mint
• olive oil & balsamic vinegar
• salt & pepper
2) Soba Salad:
This one is a little harder to make if you're not lucky enough to have access to Japanese supermarket and food products, however these days they're much easier to find!
Ingredients:
• 1 portion of soba noodles
• a thick wedge of cucumber sliced into segments
• 1 small carrot, shredded
• 4 or 5 cherry tomatoes, sliced
• 1/2 avocado, sliced
• 2 tsp ponzu sauce (yuzu seasoned soy sauce)
• a generous shaking of Japanese crushed sesame seeds
• top with a shaking of Japanese fish flakes
3) Mixed Grain Salad
This is a slightly more exotic twist on your normal couscous salads. Mixed grains have become quite "trendy" as a healthy carb option as they're high in fibre and often a great source of LBV protein! This one has a rainbow of colours too, so looks as great as it tastes!
Ingredients:
• 1 bag of mixed grains (I use Waitrose LoveLife brand, however other options are available in the market)
• 1/2 red pepper chopped into small pieces
• 1/2 yellow pepper ""
• 1/4 purple onion ""
• 3 or 4 sun-dried tomatoes ""
• 4 or 5 cherry tomatoes sliced into quarters
• 1 tbsp white wine vinegar
• 1/2 tsp extra virgin olive oil
• salt & pepper
4) Carrot Salad
This is definitely the simplest salad in this feature, and also has the strongest flavours and boldest colour! As it is so simple it can be easily adapted in terms of portion size.
Ingredients:
• 3 - 4 medium sized carrots, shredded
• 1 tbsp whole grain mustard
• 1 tbsp runny honey
• 1 1/2 tbsp fresh orange juice
• 1/2 tsp white wine vinegar
• salt & pepper
