Today I made one of the healthier versions - stuffed with raspberries and strawberries - however you can stuff it with whatever you like, a lot of people use spreads like Nutella; I used the Malteser spread (AMAZING!)
Here goes...
1) get a handful of your desired fruit - I've used frozen berries as they're super easy to cook up into a jam/coulée.
2) add 1tsp of caster sugar to stop the filling from being a bit sour and cook on a hob until it starts to reduce.
3) if you want it to be thicker add around 1/2 tsp of a starch - I used potato starch. Also if you don't like seeds you may want to strain the mixture but this may make it thinner in consistency as well.
4) Leave this on the side and grab 2 slices of bread - using a large circle cutter, cut out 2 large circles from the bread.
5) In a flat-bottomed dish, add 1 egg and couple tbsps of milk and whisk together. Leave the bread circles to soak (remember to flip the bread so it's fully soaked).
6) Meanwhile, start heating a pan with a bit of butter or oil. Once hot and the bread is soaked place the first circle down. Once it's started cooking flip it and place a generous amount of your filling in the centre.
7) Place the other circle on top, like a sandwich. Now continue to flip the sandwich and ensure its thoroughly cooked before serving up to eat!
