Afternoon!

So something that has become super trendy recently is energy/protein balls; if you follow my Instagram you'd see that I'm quite the fan! So this morning I thought I'd try make my own...

Ingredients:
- your choice of nuts, seeds and dried fruit. I used half a pre-mixed pack (around 100g) from Waitrose that contains:
   • almonds
   • pecan nuts 
   • dried cranberries
   • dried blueberries
   • sunflower seeds
   • pumpkin seed
Having said this, I added extra almonds and took out some of the fruit to get a better balance. 
- a handful of rolled oats
- 2 heaped tbsp almond butter 
- 1 tbsp honey
- crushed hazelnuts 
- 1 tsp cornflour
- a shake of ground cinnamon 

Method:
1) chop the nuts and fruit into small pieces. 
2) add all ingredients to bowl (but hazelnuts) and mix well. 
3) roll mixture into small balls, then roll in a dish of crushed hazelnuts 
4) cook in preheated oven (around 180), for around 10 minutes.

These are super easy to make as per usual with my recipes and take next to no time! The nuts, seeds, fruit and oats provide a great source of fibre, which gives you slow-release energy to get you goingn for the day. The nuts provide an LBV source of protein. Almonds in particular are a great source of vitamin E, which is also an antioxidant. Another great thing about this recipe is that it's dairy free and gluten free, so suitable for any of you suffering from allergies.
