So here is a little recipe I made up the other day - Beetroot and Mint Houmous. It's the perfect dip for Spring/Summer with such fresh flavours and bright pink colour. In fact, my friend tried this Houmous and said "it tastes of summer, if summer had a flavour this would be it!"
Ingredients:
• 1 can of chickpeas, drained
• 250g of cooked beetroot
• very generous handful of mint leaves
• juice of 1 lemon (add more lemon/lime juice to lift flavour if you wish)
• 1 garlic clove
• 2 tbsp tahini
• 100ml extra virgin olive oil
• generous shaking of salt
Method:
1) add all the ingredients to a food processor and blend until smooth.
2) I found my Houmous initially tasted a little dull - add citrus juice to lift flavours, it makes so much difference, you'd be surprised!!
