EmiEats cake for breakfast

Morning!

I was very busy yesterday so didn't get a chance to post the adaption of a recipe of Banana Oatmeal Cake I made in the morning. It's perfect for breakfast, and relatively healthy as cake goes - it's full of oats and I also added seeds, so it has a high fibre content. Oats are also high on B vitamins which aid energy release.

Ingredients:
• 3 sliced bananas
• 1 egg
• 280g flour
• 140g oats (+extra for topping)
• 3-4 tbsp milk (I used almond milk)
• 200g sugar
• 110g butter (I used a dairy free alternative)
• handful of mixed seeds
• 1 tsp of baking powder
• generous amount of cinnamon

Method:
1) add all the ingredients together and mix well. If the mixture looks dry add more milk. It should produce quite a thick dough-like mixture, you do not want it to be liquid-like.
2) line a baking tray or dish and pour in the mix - top the cake with extra oats and a dash of cinnamon.
3) stick in the preheated oven at a temperature of around 180 degrees, as to ensure the cake doesn't burn on the outside before cooking on the inside.
4) my estimation of cooking time was around 25-30mins (I can't quite remember...) - just regularly check the cake with a fork or skewer to see if the inside is fully cooked.

I'd say this cake is best served warm, and can be served with spreads or toppings like peanut butter, or a sweet icing (maybe caramel flavour?) if you're eating it during the day as a treat. Also note that due to its doughy texture it is quite a heavy cake to consume.

Give it a go - it's a great breakfast treat!
