Summer is well and truly here! Hopefully you've been able to enjoy the sun as much as I have!
Here's a quick and easy recipe for a chocolate mousse that can be used in lots of ways and is actually free of chocolate, meaning its dairy-free, sugar-free and low in saturated fats, most commonly found from animal sources like milk and cream.
The secret ingredient is Avocado, aka the trendiest fruit around. Avocados are full of healthy unsaturated fats, including omega 3 and 6, which are said to be essential for healthy brain development and improve our learning capabilities. The fats also allow better absorption of essential fat-soluble vitamins (A, D, E, K) and fibre.
Ingredients:
- 1 ripe avocado
- 1 or 2 ripe bananas
- generous tablespoons of cocoa
- icing sugar can be added for extra sweetness
Method:
Pretty much just mash it all together, and test the flavour regularly to decide how much cocoa (and icing sugar) to add to the mixture.
Uses:
There's a few ways I like to use the mousse;
- Chocolate spread: I use it anything quite plain, lie on oatcake or digestive biscuits or tortilla wraps
- Dessert: It can be used as a mousse dessert, served with dark chocolate
- Topping/Filling: I've used it once as a topping and filling for pumpkin cupcakes
Basically you can eat it all day everyday on anything you like and be guilt free!
