EmiEats Gluten & Dairy Free Pancakes

Morning all! 

Here's a recipe I used a few weeks ago!  I chose to use gluten free flour as it is said to be better for you and prevents bloating after eating - also with pancakes it works well as it gives a good light texture as the flour is very light! My pancakes were dairy free as I only drink soya milk, so it was more out of habit - but soya milk is considered a healthy alternative to milk as it is easily digestible, high in protein and low in fat!

• 125g flour
• 1 egg
• 250ml milk 

All you have to do is whisk in the egg, then gradually add the milk and the batter is ready! Simple! You may want to use a little butter on the pan to make the pancakes easier to cook and flip! 

Then you can add whatever toppings you like; my favourite options were: 
• almond butter, honey and banana 
• lemon curd with blueberries!
