EmiEats Classic Chili con Carne!

So here's another super easy and cheap recipe post!

Chili con carne is not only a Mexican classic that is really popular in the UK, but it also has many health benefits;
  • it is really high in protein - beef is a HBV source of protein, so provides you with all your essential amino acids.
  • The spices used in chili con carne are all considered metabolism boosters, which means they increase your body's fat burning power
  • Carrots are full of important vitamins, particularly vitamin A - which also happens to be an antioxidant.  Antioxidants are said to minimise your chances of cancer.  

Ingredients:
- 1 pack of lean beef mince 
- 2 onions
- 1 carrot
- 2 cloves of garlic
- 1 can of kidney beans
- 1 can of chopped tomatoes
- Chili spice mix (usually a mix of chilli powder, cumin, paprika, cayenne pepper)
- dash of veg/olive oil

These measurements equates to the equivalent of approximately 4 portions, and can be easily frozen too.  

Method:
1) Heat up a large pan on the hob with a dash of oil.
2) Dice the onions, carrots and garlic into small pieces, and then add them to the pan with the mince.  Keep mixing it around to ensure everything browns evenly.
3) Strain off any extra meat juices, then add the kidney beans, tomatoes and spice mix, stir well to ensure even flavour distribution.  
4) Cover the pan and put on a low heat to simmer for a while, so that the meat is thoroughly cooked and all the flavours can be absorbed.


There are many ways you can eat Chili, here are a few suggestions;
  • I always like to eat chili con carne with some fresh crunchy lettuce salad, it evens out the palette and is really refreshing
  • Popular mexican style is to eat it in tacos 
  • In the UK it is popularly eaten with rice or even as a topping in jacket potatoes!
  • If you got a bit leftover you could always serve it as a spicy alternative to bolognaise sauce with pasta!
  • Basically the options are endless!!
