So I'm not feeling too great this weekend, so I decided to cook up something my mum would always make for me at home when I was poorly - basic vegetable soup.
• 1 sliced carrot
• handful of sliced cabbage
• handful of broccoli pieces
• couple handfuls of peas
• as much rice as you fancy
• a lotttttt of water
• vegetable stock (I used bouillon powder )
• a bit of grated ginger
• a bit of chilli powder
• a bit of salt and pepper
Like with most things I make the method is simple! Just pretty much chuck it all in there and stir it up!
This recipe is also a great way to use up left over veg, so you can add and change combinations as much as you like!
The veg provides you with lots of vitamins and minerals, which can help repair your body and make you feel better. Then the spices, like ginger and chili don't just add flavour, they boost your metabolism and are full of antioxidants.
So if you're ever feeling down and a bit unhealthy, cook up a bit of soup and it might make you feel a whole lot better!
