So I'm back at uni in Leeds, and it's fair to say it is FREEZING! This morning I woke up to a tundra of snow! So to ease the chill I decided to make a breakfast crumble this morning :)
Ingredients:
• 1 small Apple
• cinnamon
• sugar
• sultanas
• ginger
• oats
• plain flour
• vegetable oil
• pumpkin seeds
So, like everything I make, this is super easy and there aren't really any proper measurements, it's very much up to you how much of everything you want to use!
1) so I started by slicing the Apple into small pieces - you can peel the Apple of you prefer, but I didn't as the skin contains lots of important nutrients like fibre!
2) to soften the apples I microwaved them for about half a minute with a little sugar. Then after I added a few shakes of cinnamon, sultanas and a grating of fresh ginger.
3) in a separate bowl I then mixed oats, a little flour, cinnamon, a bit more sugar, pumpkin seeds and a little bit of oil, just to give extra crunch and help the mixture hold well.
4) I then poured the oat mixture over the apple pieces and spread evenly. I then put this in a preheated oven (180-200 degrees) for probably around 20 mins (forgot to actually check! Woops) - but basically until the topping becomes a bit crunchy and golden.
Voila, healthy breakfast crumble!
